Well, I admit it's not perfect. Still trying to improve on my vocal. Anyway, enjoy =)

Chocolate Brownie

Having a sudden craving for brownie, so I went to google some brownie recipes online. The recipe that I followed was from bestrecipes.com.au and it came out to be delicious! The brownie was crunchy at the outside and soft in the inside.

Here's the recipe for it.

Ingredients
125g butter
1 1/2 cups caster sugar
1/2 cup cocoa powder
1 tsp vanilla essence
1/4 tsp salt
2 eggs
1 cup plain flour (sifted)
1 tsp baking powder
1 cup white choc bits

Procedures
1. Melt the butter in a pan over medium heat.

2. Stir in the sugar, cocoa powder, vanilla essence and salt.

3. Remove it from heat and allow it to cool slightyly, then quickly whisk in the eggs.

4. Fold the mixture through the sifted flour and baking powder, and add in the white choc bits and mix well.

5. Spoon the mixture into the baking tray with baking paper on it.

6. Bake at 170C for about 25-30 minutes.

7. Allow the brownie to cool before cutting it into small pieces.

8. While serving on the next day or so, heat up the brownie for bout 15 seconds in the microwave and serve with vanilla ice cream.

Apple Crumble with Custard

So, after watching My Kitchen Rules, I got inspired by Mick & Matt to try out their apple crumble with custard recipe but I did not use berries and coconut as used by them.

Well, here's the recipe.

Ingredients
Crumble:
2 tbsp brown sugar
2 tbsp plain flour
30g butter
45g (1/2 cup) rolled oats

Fruit Filling:
4 large/6 small granny smith apples, peeled, core removed and cut into small pieces
60ml water
80g brown sugar
1/2 tsp ground cinnamon

Custard:
300ml thickened cream
125ml (1/2 cup) milk
3 tsp vanilla essence
4 egg yolks
75g (1/3 cup) caster sugar

Procedures
1. Preheat oven to 180C.

2. To make crumble, combine sugar and flour in a bowl. Add in butter and using your fingertips, rub in the butter to form crumbs. When butter is well combined with the mixture, add in the rolled oats until well-combined.

3. To make fruit filling, put apple, water and sugar in a large saucepan over medium heat and cook, stirring it occasionally, for 10 minutes or until apples are almost tender. Add in the cinnamon when sugar has completely melted.

4. Dish the fruit filling onto the baking tray and top with the crumble.

5. Bake, uncovered, for 25-30 minutes or until the top is lightly browned.

6. To make custard, put cream, milk and vanilla essence in a pot over low heat and cook, stirring for 10 minutes or until almost boiling. Set aside the mixture for 10 minutes. Meanwhile, in another mixing bowl, whisk the egg yolks and sugar until the mixture turns pale. Gradually whisk the hot cream mixture into the yolk mixture. Transfer the mixture into a clean pan and stirring it over medium-low heat for bout 10 minutes or until custard is thick enough.

7. Cut the apple crumble into your desire size and serve it with custard and vanilla ice cream.

Bad presentation =( Will try harder next time...

Tiramisu

Made tiramisu the other day! It's equally easy as the green tea tiramisu that I made before. Below are ingredients and steps that I followed and would like to share with you. Hope you like it =)

Ingredients

3 tablespoons of espresso
3 tablespoons of rum

500g Spongefingers

For Mascarpone Mixture:

3 Egg yolks

1/2 Cup of sugar

250g Mascarpone Cheese

1 Cup of fresh cream

1 Tbsp of vanilla essence

Procedures

1. Beat the egg yolks and sugar in a mixing bowl set over the water bath. Beat till the mixture turns pale yellow and has doubled in volume. After that, cool the mixture in an ice water bath.

2. In another mixing bowl, beat the mascarpone cheese until it becomes smooth and creamy. Don't overbeat it or it will become clumpy. But if that happens, don't worry as you can still smoothen it with the cream later on.

3. Next, fold the mascarpone cheese into the slightly cooled egg yolk mixture above (step 1).

4. In another separate bowl, whip the fresh cream to soft peaks. Add in vanilla essence into the cream.

5. Fold the mascarpone mixture (step 4) into the whipped cream until well blended.

6. Add in the espresso or coffee powder, together with rum, into a bowl of hot water. *Amount of espresso/coffee & rum is up to personal taste*

7. Dip each spongefinger into the brewed espresso (don't let it sit in too long as it will become very soggy and wet but do give it a second or two so that it gets a little softer). Place the dipped spongefingers onto the baking tray that you're using (I used pyrex dish).

8. Spread the mascarpone mixture on top of the dipped spongefinger, and repeat this until the dish is filled up. *It's up to you to put the spongefinger or a layer of mascarpone as the bottom later, but the top layer must be the mascarpone mixture!*

9. Refrigerate it for a couple of hours (preferably overnight) to let it set well.

10. Dust some cocoa powder on top of the tiramisu before serving.

Green Tea Tiramisu

As an all time green tea lover, I had a sudden craving for green tea tiramisu yesterday night! So I decided to make this. It's very simple. Below are the ingredients and steps that I followed and would like to share with you. Hope you like it =)

Ingredients

Brewed green tea and leave it to cool

500g Spongefingers

For Green Tea Mascarpone Mixture:

3 Egg yolks

1/2 Cup of sugar

250g Mascarpone Cheese

1 Cup of fresh cream

1 Tbsp of vanilla essence

3 Tbsp of green tea powder (Adjust according to your taste)

Procedures

1. Beat the egg yolks and sugar in a mixing bowl set over a pot of simmering water. Beat till the mixture turns pale yellow and has doubled in volume. After that, cool the mixture in an ice water bath.

2. In another mixing bowl, beat the mascarpone cheese until it becomes smooth and creamy. Don't overbeat it or it will become clumpy. But if that happens, don't worry as you can still smoothen it with the cream later on.

3. Next, add in the green tea powder bit by bit into the mascarpone cheese until the mixture is well blended.

4. Fold the mascarpone cheese into the slightly cooled egg yolk mixture above (step 1).

5. In another separate bowl, whip the fresh cream to soft peaks. Add in vanilla essence into the cream.

6. Fold the mascarpone mixture (step 4) into the whipped cream until well blended. *Refer to the picture below*

7. Dip each spongefinger into the brewed green tea (don't let it sit in too long as it will become very soggy and wet but do give it a second or two so that it gets a little softer). Place the dipped spongefingers onto the baking tray that you're using (I used pyrex dish).

8. Spread the green tea mascarpone mixture on top of the dipped spongefinger, and repeat this until the dish is filled up. *The top layer must be the mascarpone mixture!*

9. Refrigerate it for a couple of hours (preferably overnight) to let it set well.

10. Dust some green tea powder on top of the tiramisu before serving.

Updates during mid-sem

I'm back to update the blog again =)

Hehe hmm...time really past super fasttttt!! It's the 7th week of uni already...however, there's no mid-term break yet!! They changed the system this semester...pushing the break towards the end of September...so sad T.T But, I'm still excited for the upcoming holidays starting from 25th of September...and it's also time to catch up with my studies as I realized that I do not really know most of my stuffs for some of the units...especially Offshore Engineering =(

Anyway, looking on the bright side...my church is organizing an annual event called Search For A Star...it's gonna be held on the 18th of September 2010... I believe that this event is gonna be awesome... Can see lots of talented ppl performing on stage... And at the same time realizing that I'm such a noob *haha*! Owells, I'll be performing in choir again this time...and the dress code is a black dress =S

Oh and not to forget...my 21st Birthday!! Hehehe it was such an awesome day...receiving so many wishes from facebook and mobile text messages...and not to forget...the presents too!! The presents are: Honda City Car (by parents), Swarovski necklace (by Mike), Teddy Bear (by Yee Ling), Journal notebook (by Yih Lim), Chocolate (by David), Watch+Other accessories (by Uncle&Aunty), 21 random items (by a bunch of crazy awesome friends)...*and I think there's one more...but I haven't receive yet...so shall wait and see hehe*

After all, I just wanna thank God for who I am today...and how awesome is our God, where He has placed so many wonderful people around me...blessing me and supporting me all the time!! And I believe that one day, through prayer, my family members will be saved and enter His kingdom, and enjoy God's love too!! =)

Hmm as the title stated, uni =)

This sem... I think it's the most slacking semester I have so far...

Haha classes seem to be not packed...

But I know the work load will be kinda heavy...

And they are coming real soon! Haha...

Owells... As usual, lectures are pretty boring *especially Offshore Engineering!*

The lecturer can talk for like 15~20 mins just for one slide... *Imagine*

Anyway, the interesting unit will be concrete I guess...

Got to build a concrete beam for a competition soon!

Hmm... Nothing much to talk bout this haha...

Updates

Hi all...it has been a long time that I didn't touch the blog at all !
Haha...new semester, new start....
Hmm I'm currently studying in UWA...
Got accepted just before the semester started...
Went to the international office a couple of times...
Just to chase them to process the application...
They wanted my last sem's results...and so I e-mailed to them...
But then they didn't check the mail ):
So end up I went to the office again...then they went to check the mail...
Printed out my results and sent it to the faculty !
Finally...I got accepted haha...
Owells...I'm glad that I got exempted for the whole year...
Thankfully ! Don't need to repeat 1st year again hehe

Passion Camp

Wee~~~~
I'm back again!
Just came back from the passion camp yesterday
It was awesome!!!!
Haha though it was a bit tiring
Actually I did not sleep well
Cz the bed was kinda dusty...
And the place is full of millipedes ):
But luckily...
There is no millipedes at all in my room!
Hehe but overall...
It's still very good!
I've enjoyed a lot there
And of cz...
I've learned lots of things through the camp
Seriously
I've learned more about God's words!
And...
I've learned about surrendering everything to Him!
I also felt that God was speaking to me...
He moved me...
Asked me to speak out and share my thoughts with others!
And I'm so glad that I actually did shared out! (:
I enjoyed the devotion time...
Gathering with my group mates
And sharing everything with each other!
Last but not least...
I enjoyed a lot during Mega Praise!
It's my first time worshiping for so long!
All of us were enjoying ourselves...
Jumping and singing all the way!

Hard Time

I kept questioning myself...am I an emo kid?
I really don't know!!
That's why I'm writing out this post...
To express the feelings in my heart ):
Knowing that you can't continue with what you have been doing for so long...
Isn't it torturing??!!!!!
I'm really trying my best to accept this...
But I just can't do it for the time being!
Different people give different advices...
Whom should I listen and follow?
I really don't know...
If I follow the one that I will feel more comfortable...
Then the others will start lecturing us again!
Isn't this so hard??!!!
Please please...
I just wanna pray that time just fly as fast as possible!
I don't want to be in this situation...
Where I am restricted to so much of these things!
And making both parties suffer so much ):
Though deep down in the heart...
It's still very strong and nothing can break it apart...
But physically...
It's weak!!
Aih really dunno how ba...
Hope everything will be fine!

Results

Hihi everyone out there...
Hehe finally the results were out...
I was so scared when I'm logging in to the website...
Afraid that I failed the two units...
Materials and electrical systems...
Cz I didn't do well for this two papers...

But praise the Lord for everything...
Every single day...
Including the day of the exam...
And the days after exam...
I was praying to God....
Pray that I will pass every unit this semester...

I was so happy when I saw my results...
Was quite satisfied with them....
Didn't expect to get such grades...
For the two units I mentioned above...
Here are the marks for all the units I took this sem...

My Days Back Home

Hello once again...
Hehe two weeks passed...
I realized that I did nothing much actually....
A lot ppl said come back msia must eat a lot...
Food that are not available in aus...
But for me...I'm not so keen for food...
Haha so it doesn't make any difference at all...
In this two weeks...
Went out with friends 3 times only...
Sad ya?
Hehe other times just stay at home...
Or not hang around the mall with mum....
Boring boring boring...

I wanna go out for sports....
But it seems that no one is free to play with me....
End up staying at home...
Facing the computer almost the whole day =(
Watching dramas or playing some computer games...

This weekend will be quite fun I guess...
Going out for a concert near Amcorp Mall...
Can't wait for the day...hehe
Happy cz can see quite many singers out there...
Will update more about the concert after that day!
Sunday going to the church in the morning...
Then gotta drive to Ipoh with mum...
Attending a wedding dinner there...
And staying a few days at Ipoh...
Hope it won't be that boring as I thought of...

Next weekend will be great too....
I'm following my friend for christmas caroling...
It will be fun I guess...
Hehe can't wait for it too...
1st time joining this...
Hope that I am able to join it every year!

Back Home

Hi there..now I'm back to Malaysia...
Not really happy to stay here...
Maybe I'm used to the lifestyle over there...love Perth so much!
Having such a great time over there...
With a bunch of loving friends....
Can hang out together all the time, and had lots of fun together with them!
Miss you all!!!!

Hmm but the one thing I love to be in malaysia is...
My best friends and family are here...
This doesn't mean that I got no best friend in Perth...hehe
I miss my friends so much...though its just a few months...
But next year it will be more saddening...
Cuz it will be a long time that we couldn't meet each other...
I wont be back to Malaysia until the end of the year =(
Will surely miss you all a lot!
Sad that they're having exams now...
Gotta wait till next week...then can hang out with them!
Really miss the days we had together...happily having fun out there ^^

Aiks now I'm always thinking of all of them in Perth...
Enjoying themselves at the up North trip...
Sad that I couldn't go...can't change my flight...sad sad =(
